S’mores Cookie Bars

Spending time with good friends is always the way to beat stress.

This past week has been stressful for us for numerous reasons. Life gets stressful, ya know. All of the little mundane things that you have to get done during the week sometimes get a little overwhelming. But right now, the biggest stress of all for us, is that we are in the process of returning to NYC from LA and THAT is alllll the stress.

We’ve actually been back for a while but now it’s a permanent thing. Well as permanent as being bicoastal can get. Both the hunny and I have jobs where we travel periodically (I’m a ballet teacher and I travel to choreograph and wife is a makeup artist… that’s probably pretty much self-explanatory). So since we are in the process of returning and re-setting up life in the big city, we of course, are apartment hunting. If you’ve ever been in the market for a new place in NYC, whether renting or buying… I’m sure you feel our pain. Either you find the perfect place…but it’s thousands of dollars beyond what you could even imagine performing… OR… You find something that is in your price range, but when you go to view it… Let’s just say the mice and sketchy lobby is not the only thing to be afraid of. Ahhhhh… Life in the Big Apple!! Gotta love it!

So to loosen this ball of nerves I call my life, we decided to get out of the city and visit a friend in New Jersey for the weekend. It’s perfect because it’s only a train ride away and we can feel normal for a while. We even get to spend time in a backyard!!! Something practically unheard of in NYC! Yessss! No loud trains rattling by and a backyard…AND wine to boot!!! Just what we needed after a long week!

So, of course, I had to bake for the occasion.

I didn’t want to do anything fancy… As a matter of fact, the least fancy the better! We needed slumber party snacks!! Sweet and gooey and messy!!!!

S’mores cookies bars it is!!!!!

They are perfect for a group and will satisfy everyone’s sweet tooth! They’re not all that pretty but when you’re hanging out, eating and having a good time with the people who matter most… pretty is the last thing on your mind!

There’s a MILLION recipes for this… but try this one also! They are pretty much fool-proof… After all, you can’t really go wrong with chocolate and marshmallow!


S’mores Cookie Bars

2 1/2 Cups All Purpose Flour

1 1/2 Cup Graham Cracker crumbs (about 1 9 graham crackers, smashed)

1 Teaspoon Baking soda

1/2 Teaspoon Salt

2 Sticks Unsalted Butter

3/4 Cup Granulated Sugar

1 Cup Brown Sugar

2 Large Eggs

1 Teaspoon Vanilla Extract

16 ounce jar Marshmallow Fluff

2 XL Chocolate Bars (I used Dark Chocolate Hershey’s)

Preheat oven to 350 degrees.

Line a 9 inch square baking pan with foil, leaving about an inch over hang. Spray lightly with cooking spray

In a medium bowl, whisk together flour, graham crackers, baking powder, salt. Set aside.

In the bowl of a mixer, cream together butter and both sugars until light and fluffy. Add the eggs and vanilla and beat until combined.

Add the dry ingredients to the butter/sugar mixture. Mix until combined.

Take half of the graham cracker dough and gently press into the bottom of prepared pan like a crust. Place the two chocolate bars over crust, side by side.

Spread marshmallow fluff over the chocolate… The best way to do this is to use a rubber spatula and just go for it. Stay on top of the chocolate only. I used half of the jar.

To make the topping, there’s 2 ways you could go… Choose what sounds easier. I’ve done both and they both worked perfectly.

  1. Using the leftover dough, take large chunks and flatten between your hands. Then carefully lay over the marshmallow. Continue until the entire thing is covered.
  2. On a piece of plastic wrap… press dough into a square large enough to fit your pan. invert on top of your marshmallow/chocolate filling and gently peel back the plastic wrap… There should be a perfect square topping left on top of your bars.

Bake for 25- 30 minutes or until edges are golden brown.

Cool completely before cutting and serving. Or if you’re like us…go ahead and eat warm!!! It’s messy but sooooo yummy!!!!!!
