It’s Labor Day!!!

It’s the unofficial last weekend of summer!

So crazzzzzy! The summer definitely flew by! I started this blog at the beginning of summer and now look!!! An entire season has passed!

The kids here in NYC will be back to school this week and we will all be back into the swing of regular life. Not that I’m complaining… we all know that I’m waiting on that first official day of Autumn. I’m definitely the crazy  pumpkin spice loving, fall lady. I don’t deny it… I know folks look down on those who prematurely pumpkin spice it up but… *shrugs* I gotta be me!!!!

So to celebrate the last Sunday of my summer break… I made cake!!! Chocolate cake!!! A Coca- Cola cake! Yup… It has Coca-Cola in it. I’m not a Coke drinker but baking it… well, that’s not the same as drinking it… Always better to bake it.


The cake is basically a much sweeter chocolate sheet cake. It’s another southern favorite dating back to the 50s. I call it a “Church- lady” cake. You know… The type of sheet cakes people bring to church pot lucks! Those are THE BEST!! You can find some of the best… and weirdest… food at church pot lucks!

Anyway… I have to admit… The recipe is not mine… It’s a combo of a few different sources but the cake is basically the same everywhere you look… Coke, sugar, butter and marshmallows.

There are kind of a lot of steps but it doesn’t take that long from start to finish… about an hour and a half…So try it!!! It’s perfect the next day or to take to a friend’s house to share.


Coca-Cola Cake


2 Cups sugar

2 Cups all-purpose flour

1 Teaspoon Salt

1 ½ Cup small marshmallows

1 Cup Coca Cola

½ Cup butter

½ Cup vegetable oil

3 Tablespoons cocoa

1 Teaspoon baking soda

½ Cup buttermilk

2 eggs

1 Teaspoon vanilla extract


½ Cup butter

3 Tablespoons cocoa

6 Tablespoons Coca-Cola

1 box (16-ounces) confectioners’ sugar

1 Teaspoon vanilla extract


Preheat oven to 350 degrees. Grease a 9 x 13 inch cake pan. Set aside.

Make the cake:

In a large mixing bowl, sift the flour, sugar and salt. Add the marshmallows.  Set aside.

In a medium saucepan, combine the Coke, butter, vegetable oil and coca. Turn heat to medium and cook until the mixture comes to a boil. Pour over the dry ingredients.

Dissolve baking soda in buttermilk and pour into the mixture. Add the eggs and vanilla. Mix until just combined.

Pour batter into prepared cake pan and bake for 35-45 minutes or until a toothpick inserted in the center comes out clean.

While cake is baking, make the icing…

In a medium saucepan, combine the butter, cocoa and Coca- Cola. Bring to a boil over medium heat. Pour over the confectioner’s sugar. Add the vanilla and stir until smooth.

Pour icing over hot cake and let cool completely!
